A new release Whisky, a few of your favourites left, & Whisky Barrel Aged Gin
Our latest small batch Mountain Matured Whisky has been working hard in our bond store for 3 years, since being distilled in an award-winning Tasmanian distillery.
The barrels sourced for this release are American oak ex-Heaven Hill and ex-Buffalo Trace bourbon barrels and some French oak ex-Tawny (Port), Apera and Shiraz barrels.
As 70-80% of the flavour and 100% of the colour of matured whisky comes from the barrels, we wanted to share with you a little about the provenance of the barrels we sourced. Our American barrels are made from white American oak and had previously held Kentucky straight bourbon whisky in them for around five years. The Australian barrels are made from French oak and came from a renowned winery in South Australia. They previously had Tawny fortified spirit (made up of Grenache, Mataro and Shiraz) and Apera for around 10 years.

All have matured for three years.

Tawny Cask Whisky 46% Single Cask
A cracking Everyday Whisky!
This single cask whisky is a stunner! From the first nosing you quickly realise this has been matured in an ex-Tawny cask. With amber honey and Davidson plumb on the nose together with hints of spicy dried fruits. On the palate it’s toffee, syrup and dates that emerge with hints of caramel and shortbread. A smooth long finish is capped off with lovely dark chocolate. Clearly a tawny cask provenance with soft fruits and a restrained nose. Some nice wood and tannins evident with this earthy whisky that speaks nicely to the DNA of the cask.
It has been described as "Very moreish!"
Rum Single Cask Matured Whisky (Cask Strength) 60%
DIRECTORS' RESERVE
This rum cask expression boasts a surprisingly soft and nuanced bouquet that invites the senses. On the nose, it evokes overtones of a decadent fruit cake with a touch of wood from the cask adding depth. It's at CASK STRENGTH 60% ABV, but you'd be hard to pick it. Despite its high ABV, your palate is treated to a velvety honeycomb sweetness, with delicate hints of dark chocolate. The rum notes are a nod to the cask's provenance, creating a harmonious balance of flavours. The finish is rounded, oily, viscous and creamy, with a medium length that lingers, leaving a lasting impression.
It took our tasting panel to a tropical beach with sand, sea and coconut palms!
Shiraz/Bourbon Double Cask Matured Whisky 51%
This whisky been maturing for three years. One year in a 228L French Oak ex-Shiraz barrel and then decanted into a second fill 20L ex-bourbon barrel from Heaven Hill Distillery. The delicious Tasmanian new make spirit has combined beautifully to produce a well-balanced whisky with a lot going on. Vanilla, Caramel and spice on the nose, with the spiciness continuing in the mouth. Layers of violet crumble and burnt toffee then evolve before a lovely smoky finish, which is a nod it its artesian production.
It has been described as “a Whisky drinker's Whisky with a nice smoky finish”. A very limited release of only 38 bottles.
Bourbon Single Cask Matured Whisky 56.5%
This whisky has typical ex-bourbon notes coming through with the addition of dried fruit and citrus on the nose.
It has subtle wood and bourbon evident on the palate with vanilla and sweetness coming through together with a good char on the finish. This is a balanced whisky with some nice smoky tobacco notes.
A deliciously approachable whisky.
Whisky Barrel Aged Gin 42%
ONLY 8 LEFT
Triple organic juniper macerated to unlock all of the botanical's full potential. Left to steep for 24 hours, with more fresh organic juniper added to the pot before distilling. The vapour basket is packed with even more organic juniper and other botanicals to perfectly balance the gin.
After distillation the gin is then matured in an ex-Bourbon barrel for 5 months in the pristine Australian snowy mountains. The whisky barrel maturation has added another layer of complexity to this well balanced gin. If you are a whisky drinker, it’s perfect for sipping neat or on the rocks. Some prefer this whisky aged gin with soda, and garnished with a slice of fresh lemon, or even a few blueberries. It's also perfect for a sneaky negroni.
Our testers described the Gin as “an exotic bouquet of flowers on the nose and a Juniper led chewy sweetness in the mouth as the botanicals evolve. It finishes with a nice subtle nod to the Whisky barrel maturation”.
Apera Single Cask Matured Whisky 64.2% (Cask Strength)

We loved this whisky just as it was, and decided it needed to be released at cask strength! Although this very special apera cask matured expression has a high ABV even by cask standards, it is beautifully smooth and rounded. With this exceptional whisky you can expect to pick up jasmine notes & charred wood on the nose before hints of cypress tips, caramel and marzipan evolve. A Smoky whisky that has a bite.
It was described by one independent distiller who sampled it as "A whisky drinker's whisky that takes you straight to smoky whisky bars. A whisky that deserves to be savoured over time!!" We definitely agree!
Tawny Single Cask Matured Whisky 55.2%

From the first nosing you will quickly pick up the ex-tawny cask influences. It has floral sweet opening notes and is soft, rounded and sweet on the tongue. Think peaches and stone fruit with a nod to its tawny cask provenance. This whisky has a long finish with hints of wood and great legs.

DOUBLE CASK SERIES - PORT CASK FINISH 57.3%

A Bourbon Cask Expression has been finished in ex-Port barrels for a few months and released at @ 57.3%. This whisky has typical ex-bourbon cask characteristics and a really nice silkiness from the first sip but with another layer added. The port finish has produced a multidimensional whisky with dried fruit, bourbon, honey and caramel notes all coming through.
You’ll want to pair this with your pudding…and ask for seconds!

Our Directors' Reserve Rum Cask Whisky at Cask Strength 60%.

Our Small Batch Barrels
Our small batch barrels were filled in October 2019 and have been maturing beautifully in the Snowy Mountains for the past three years. One of the benefits of being in the Snowy Mountains is the large variations in temperature and conditions throughout the year. The hot dry summers and the cold snowy winters and storms have all added to complexity of the whisky's profile. After all that hard work over the summer months the whisky has had a well-deserved slumber over the winter months, except when it is woken by the winter storms or when it's time for decanting!! Each single barrel has been working hard and again produced some very delicious flavour profiles. We are sure you will enjoy them as much as we do!
The tasting profiles coming from each barrel
The tasting profiles coming from each barrel are very exciting and very different as they are heavily influenced by the barrel's provenance. We have also found that even though the same barrel type may contain the same spirit, each barrel will nose and taste differently depending on their placement in the bond store and the individual uniqueness of each barrel.
Tasting the spirit is a necessary but definitely fun part of maturing whisky and let’s face it someone has to do it! We can attest to the fact that each barrel is tasting delicious but don't just rely on our opinion. A couple of distillers who are part of our tasting panel were very impressed with what we have been able to produce with this release.
The tasting profiles are enhanced because we don't flock* our whiskies, ensuring the natural flavours and textures remain in each bottle. 100% natural whisky from barrel to bottle!
* Flocking refers to the removal of naturally occurring oils and fats which appear as sediment in whiskies diluted from cask strength. This is usually done so that the whisky looks completely clear in the bottle. Snowy Mountains Spirits never flock our whiskies because we believe that removing those naturally occurring fats and oils takes away from the flavour, texture, mouthfeel and finish of the whisky. We want all of that good stuff and think you do too!
