SMALL BATCH WHISKY

 Our quality whisky is the unique marriage of new make spirit from award winning Tasmanian distilleries in specially selected hand-crafted barrels from around the world, carefully matured at 1200 metres above sea level in the pristine environment of the Australian Snowy Mountains.

Our small batch barrels have been maturing beautifully in the pristine conditions of the Australian Snowy Mountains. One of the benefits of being in the Snowy Mountains is the large variations in temperature and conditions throughout the year. The hot dry summers and the cold snowy winters and storms have all added to complexity of the whisky's profile.  After all that hard work over the summer months the whisky has had a well-deserved slumber over the winter months, except when it is woken by the winter storms or when it's time for decanting!! Each single barrel has been working hard to produce some very delicious flavour profiles. We are sure you will enjoy them as much as we do!

 Our barrels are sourced from around the world

They are a mix of American oak ex-Heaven Hill and ex-Buffalo Trace bourbon barrels and some French oak ex-Tawny (Port), Apera (Sherry), French oak Shiraz barrels, Spanish PX and Oloroso barrels and a very special Agave barrel.
As 70-80% of the flavour and 100% of the colour of matured whisky comes from the barrels, we wanted to share with you a little about the provenance of the barrels we sourced. Our American barrels are made from white American oak and had previously held Kentucky straight bourbon whisky in them for around five years. The Australian barrels are made from French oak and came from a renowned winery in South Australia. They previously had Tawny fortified spirit (made up of Grenache, Mataro and Shiraz) and Apera for around 10 years. The Spanish PX and Oloroso barrels come from JL Rodgriguez cooperage and held PX and Oloroso in Solera for average 10 years. The Agave barrel came from a famous Agave distillery in NSW!

The tasting profiles coming from each barrel

The tasting profiles coming from each barrel are very exciting and very different as they are heavily influenced by the barrel's provenance. We have also found that even though the same barrel type may contain the same spirit, each barrel will nose and taste differently depending on their placement in the bond store and the individual uniqueness of each barrel.
Tasting the spirit is a necessary but definitely fun part of maturing whisky and let’s face it someone has to do it! We can attest to the fact that each barrel is tasting delicious.

To Flock or Not to Flock?

The tasting profiles are enhanced because we don't flock* our whiskies, ensuring the natural flavours and textures remain in each bottle. 100% natural whisky from barrel to bottle! We also don't chill filter our whiskies to maintain as much flavour as possible!!
* Flocking refers to the removal of naturally occurring oils and fats which appear as sediment in whiskies diluted from cask strength. This is usually done so that the whisky looks completely clear in the bottle. Snowy Mountains Spirits never flock our whiskies because we believe that removing those naturally occurring fats and oils takes away from the flavour, texture, mouth feel and finish of the whisky. We want all of that good stuff and think you do too!
